White Possum Scarletta Bitter Citrus Amaro
White Possum Scarletta is one of the many local Campari replacements now available in Australia, designed primarily for negronis and other classic Campari cocktails. Made with 'homegrown and foraged lemon myrtle, as well as a blend of various citrus peels and bitter roots.' On the nose, Scarletta seems a faithful craft recreation of the imported classic, although with more fruit-like character than Campari's pepperiness. On the palate there’s far less sugar and a more intense dandelion bitterness than Campari’s relatively soft pithiness. In a Negroni, that bitterness dominates, too. This is not an amaro for the faint of heart!
