‘Hand-crafted wines begin with a dream, the dream of what might be as the first vine is planted.’ So said Nina Stocker, the first winemaker for In Dreams. Anthony Fikkers took over winemaking in '19. Pinot noir and chardonnay are sourced from 3 low-yielding vineyards in the cool Upper Yarra Valley. The cooler microclimate of the area lends itself to traditional winemaking techniques, such as small-batch fermentation and delicate use of French oak, which allow the fruit to express itself. -JAMES HALLIDAY
