If you are thinking about starting a small winery from scratch, you must have a business plan. Dan Bettio and Lennie Lister are the owners of Arlo Vintners, each with over 20 years experience working in wine, chiefly in North East Victoria. Their plan is close to a template for others to adopt. Its credo is to select vineyards with something special about the region and adopt small-batch winemaking to produce 100 dozen bottles of each of their wines. They intend to open a cellar door in Rutherglen, the beating heart of North East Victoria. -JAMES HALLIDAY
