MV Chandon Australia Étoile Brut Release No. 2, Victoria
A blend of 48/45/7% pinot noir/chardonnay/pinot meunier. Five years on lees, 5g/L dosage. The second release of what Chandon describe as their 'ultimate expression'. Both in its construction and style, this multi-vintage (and multi-region) wine is reminiscent of Krug Grande Cuvée. A pale, bright green gold, this has complex scents of orchard fruits, marzipan, hazelnuts, gentle honeycomb and freshly baked biscuits. Gently textured, nutty and saline on the long, beautifully balanced palate. Complete. – Philip Rich

2024 Dal Zotto Wines Pucino Vintage Prosecco, King Valley
A definite step up from non-vintage and, while it shares the same high level of joyful prosecco exuberance, there is added depth of flavour and a rousing savouriness that shows the serious side to the grape. Scents flow from floral through to citrus with green apple and honeydew melon. A lasting note of preserved lemon savouriness brings an intensity of flavour to the palate that resonates. Hard to say no to a second glass. – Jeni Port

2021 Deviation Road Loftia Vintage Brut, Adelaide Hills
This comes in at 80/20% chardonnay/pinot noir and 6.5g/L dosage, disgorged August '24. The result is a superfine and lively fizz offering upfront fruit with more complexing savoury notes. Fine bead and creamy mousse, wafts of lemon blossom and lemon salts, almost an oceanic character that’s so appealing. Some autolysis complexity from grilled nuts and toasted brioche (not much, just the right amount). This is super refreshing and mouth-watering with its freshness. Very good fizz folks. The back label says this is an aperitif-style and yep, perfect as that. – Jane Faulkner

2018 Gembrook Hill Blanc de Blancs, Yarra Valley
Made from chardonnay planted in '83. Traditional method, six years on tirage. Zero dosage. A light, bright green gold. Subtle grapefruit brioche and orange blossom. Bone dry and persistent with a very fine vein of acidity running through the wine. A gentle nuttiness, too. An aperitif style that will unfurl gracefully over the next few years. – Philip Rich

2017 Highland Heritage Patrono Cuvée Brut Méthode Traditionnelle, Orange
78 months' extended bottle ageing in this new disgorgement. 70/30% pinot noir/chardonnay. Yellow plums, sunflowers and honeysuckle. A lemon citrus core, with notes of marine shells and talc powder. This is shockingly fresh and lively, with biscuit crumbs and almond meal. Its extended lees age gives a layer of praline and just-tanned toast. Dosage is kept low and it suits the electric energy of the wine. It's squeaky clean and a joy to drink. This still has a long life ahead. Bravo. – Shanteh Wale

2009 House of Arras EJ Carr Late Disgorged, Tasmania
Disgorged November '23. Pale straw with an energetic bead and mousse. Expressive green apple, lemon, grapefruit and white peach fruit tones with hints of soft spice, fresh brioche, clotted cream, sea spray, crushed riverstone, shiitake broth, crushed oyster shell and freshly baked pastries. Wonderfully composed; the aromas transpose neatly over onto the palate, which shows impeccable balance and harmony. A high-tensile, minerally cadence drives things along admirably, finishing dry, pure as snow melt and layered in its spice and autolytic complexity. Such beautifully made wines, they are just a pleasure to drink. – Dave Brookes

NV Nadeson Collis Coda Brut Nature, Henty
From a solera that begun way back in 2003. 85% chardonnay with the balance coming from pinot noir/pinot gris/meunier. Artisanal grower Champagne meets the Jura in this wildly idiosyncratic and distinctive wine. Where do I begin? Aromas of sun-warmed fuzzy peach skin, grilled hazelnuts, bread dough and complex, oxidative sea breeze scents. The palate is similarly rich and powerful and the finish is saline and long. It isn't for everyone but, if you like the sound of this, drink it out of white wine glasses with 36-month Comté or whatever takes your fancy. It can handle it. – Philip Rich

2017 Printhie Wines Swift Limited Edition Sparkling Rosé, Orange
A collaboration between Jumbled and Emmanate Creative made from 65/30/5% chardonnay/pinot noir/pinot meunier. Disgorged in October '23 and on its lees for 72 months. A low dosage of 3.5g/L. The palest rose gold hue in the glass. Mirabelle plums, Rainier cherries and lilly pilly fruit. There are frangipani and freesia blossoms. A hint of orange blossom honey and some beeswax. Acidity sweeps through and the palate is left quite dry and sparklingly clean. Some almond and cranberry nougat and a smattering of candlenut creaminess on the finish. A recurring echo of alpine strawberry keeps the wine journeying on. Impressive; a mark of a very expressive vintage under caring and precise hands. – Shanteh Wale

2011 Stefano Lubiana Prestige, Tasmania
Sparkling Wine of the Year for the 2026 Halliday Wine Companion. 60/40% chardonnay/pinot noir, disgorged October '23 with a whopping 11 years on lees. So harmonious and complete with tones of citrus, sea spray, crushed shells, dried shiitake, pipe tobacco, Kalamata olive, fresh pastries and toast. Bone-dry and beautifully focused, it travels on rails of crystalline Tasmanian acidity with a 'sucking on a river pebble' savoury aspect and a finish that shows remarkable sustain and harmony. Just superb. – Dave Brookes

2022 Terre à Terre Daosa Rosé, Adelaide Hills
This is 66/30/4% pinot meunier/pinot noir/chardonnay. Disgorged September 2024. This is a delight. Frisky sparkling of great energy, immense character, light savouriness and distinct, expressive mineral charm. A striking saline, briny vein through tart cranberry, rosehip tea, crisp red cherry and dashes of sweet spice, green almond and white pepper. So fragrant; tightly wound fizz with a light, white balsamic zing in tow. Quite focused in its way. So much character here, fine detail in fruit, savouriness, minerality and pristine bubbles. Wonderful stuff. – Mike Bennie
