Robbers Dog Limecello
While lemoncellos are a common style among Australia's craft distilleries, there’s also a trend of producers branching out into using other kinds of citrus for cello-style liqueurs. And why not, when Australia has such an abundance of good citrus fruit? Here we have a lime-based version, and what to say except holy green citrus Batman, this sure does smell like fresh limes! Candied lime peel is balanced with natural juiciness and an impressive lack of oxidative character, which is hard to achieve with fresh citrus. On the palate, the sugar takes over a little, so a touch more acidity might be nice, but this is still a delicious and natural-tasting product. With a bit of fresh lime just this could almost serve as a high-class margarita mix.
