Blackwattle Distilling is a covid-era project in the inner-western Sydney suburb of Rozelle and inspired by the history of Blackwattle Bay, the site, so they claim, of Australia's first legal distillery. Producing a range of gins and vodkas, this is a thoroughly modern and urban exercise, collaborating with local restaurants and artists to create cultural context around their products in ways many producers neglect. Forming part of Sydney’s Inner West Distillery Trail – a wonderful collaboration with eight other producers to draw spirits lovers to the area – the Blackwattle cellar door is open for bottle sales and tastings 10am–6pm Monday to Friday and 2pm–6pm on weekends, with private group tours and tastings available by appointment. -JESS CLAYFIELD
