One such producer who is championing the production of newer styles in addition to Hunter staples is Travertine Wines.

2018 Travertine Fiano
Pale-green straw with aromas of ripe pears and hints of lemon honey. A palate of fresh pears with hints of lemon savoury complexity and soft acid from maturation on lees in old French oak. Finely balanced with a clean fresh lingering finish. Enjoy slightly chilled as an aperitif or pair with poultry, fish – or even pork. -
2017 Travertine Hillside Shiraz
Ripe raspberries and currants on the nose, with alluring lifted aromatics. A similarly plush palate of bright raspberries and red cherries with spicy oak and integrated acid. A fantastic example of medium-bodied Hunter Valley shiraz best paired with a slow cooked ragu or standalone while sitting around the fire with friends. -
2018 Travertine Verdelho
Light-straw with perfume of tropical fruits and melons over citrus base. Ripe, rich melons with just a hint of passionfruit flow through the palate with balanced acidity, leading into a dry lemon savoury finish. Enjoy with poached fish, or chicken with steamed greens. -
2014 Travertine The Column
This ruby-garnet red shiraz blend features aromas of mulberries and plum with vanilla menthol spicy oak. A palate of red currents and plums with spicy pepper oak and supple tannins, along with soft acid interwoven with layers of dried herbs from bottle age. Enjoy with roasted lamb or barbecue venison.

Located in Polkobin, the Travertine vineyards were originally planted in the 1980s by renowned wine and health activist, Dr. Phillip Norrie and operated under the name 'Pendarves Estate' until it changed hands in 2016. The limestone-based Belford Dome on which the vines are planted give excellent quality fruit and a distinctive flavour to the wines, showcasing Hunter Valley characteristics.
The winery's philosophy is to continue the heritage of traditional varieties from the region, as well cultivating and refining non-traditional ones such as fiano, sauvignon blanc, chambourcin and tannat.
